Gluten Free Rice Flour
Rice flour is widely used in gluten free baking. Because it is low in proteins it is less likely to cause an allergic reaction in people who have celiac disease as well as protein-related food allergies. Of the starch grains that are widely used in western diets rice is arguably the least allergenic.
Rice flour is simply rice that has been ground up into a fine powder. just as rice comes in either white or brown form, so too rice flour is made either with the bran, making brown rice flour, or after the bran has been stripped to make what is often simply called rice flour, or may be called white rice flour.
Sweet Rice Flour is made from glutinous rice, the sort used for sushi and risotto, it is sometimes used for the thickening properties it has. Glutinous rice does not contain the proteins like the ones called "gluten" that bother people with celiac disease. It is perfectly safe for the gluten free diet. Some people prefer sweet rice flour for use in pie crusts and gluten free pastry.
